Menu Plan Monday 2/12/18

While I'm still not 100%, I am feeling better and even had a bit of hunger in the late part of last week.  Not much true cooking happened but we managed to stay out of the fast food restaurants.  Monday through Wednesday I stuck to simple carbs and didn't include any dairy to keep my stomach settled.  Our shining star recipe for the chicken pictured above is simple, easy and perfect for a weeknight meal.  If you prep a few things on the weekend, you could potentially have it on the table and be cleaning up the kitchen in thirty minutes.  That alone makes it a winner in my book.

Valentine's Day over the course of the years has morphed into a family holiday.  I typically cook a special dinner that we love....not necessarily fancy, just one that tastes delicious.  When the boys were small, we didn't typically have dessert every evening (although now I do since life is too short) so the Valentine's Day dinner included some sort of sweet.  The boys always looked forward to the dinner and we now have a new family tradition that still stands today.

Have a great week.  Hug and kiss the ones you love every chance you get 💕
