Menu Plan Monday 5/30/11--Memorial Day Edition



Despite the roadblocks (house alarm going off while hubbie and I were both at class, a child that forgets to say things out loud and is a pro at "last minute" requirements of his parents, etc. etc),  that were thrown across our path this week, we did pretty good with what we were given.  Thank heavens!  I only ate restaurant food one time during the week and that was a planned event. 
I would have to say that the "Birthday Trifle" made for Boy #1 was the highlight of the week and so, so, easy!  Go here for the simple guidelines.
We have some days off, so this week's meals should be true to the plan again....because I'll be home to prep and cook them.  I already have my midterm exam in the class that I'm taking, on Tuesday, so if you think about it....send up a little prayer...thanks :o)

SUNDAY
Neighborhood Shindig
Sub Sandwiches
Chips
Boiled Corn
Homemade Peach Ice Cream
Boiled Peanuts
Special Grown Up Edition of Pink Lemonade

Peach Cobbler
(recipe post to follow, hopefully with a good picture)
Lots of other goodies from everyone else!
To Do:  Study a little, make hamburgers



MONDAY
Greek Burgers
Onion Pita Bread
Baked Potato Wedges
Steamed Veggies
To Do:  Put chicken in marinade, make pesto.

TUESDAY
Rice a Roni
Lima Beans or Peas
To Do:  Make enchilada Bake, salad.




WEDNESDAY
Grilled Chicken and Cream Cheese Enchiladas
Corn 
Sliced Lettuce, Tomato, Sour Cream, Sliced Avocado with a squirt of Lime Juice
To Do:  Working Late :(




THURSDAY
Pasta with Pesto Sauce, Peas, Ham, and Mushrooms
Green Salad
Breadsticks
To Do:  Nothing, have class tonight.


FRIDAY
Pepperoncini Beef Sandwiches
Oven Baked Pesto Fries
